1 pound ground beef
1/4 cup bread crumbs
1/2 teaspoon each-chili powder, cumin, parsley, and salt
2 ounces chopped green chilies
1 egg
1/4 cup shredded Monterey jack cheese
1/3 cup salsa
1 dash cilantro

Mix ingredients, bake 1 hour in loaf pan (20 minutes in muffin pans). Top with extra cheese if desired and return to oven until melted.
NOTE: This can be made in muffin pans (1/2 cup per) for an alternative serving style. Choose any of your favorite mexican side dishes to complete the meal.
