CAJUN BLENDED SPICE MIX (CAJUN KING)
4 Racks loin back ribs.
Note 1 1/4 to 1 1/2 lb per rack
1 Cup brown sugar
1 Cup BBQ sauce

Remove membrane from the underside of each rackTrim the heavy fat away
Apply a heavy coat of the cajun spice to both
sides and then about 1/4 cup of sugar to each one
Place on the smoker at 200* for about 1 hour
then bring the heat up to 225* for about 3 hours
The bone ends should be showing now and getting tender.
Taste one for test and spice if needed.
Coat likly with BBQ sauce and place back on the
smoker for about 45 minutes.
Note: The cooking time of 4 1/2 to 5 1/2 hours
is the key, also be careful not over cook these
are baby back ribs
