TYPES OF COOKING



There are a few different ways to cook on the grill and each has it's own unique flavor. The kind of food you are preparing helps determine what style of cooking you may want to use. Here is a brief description of some of the types of cooking.


GRILLING:
When you want the flavor of the meat and/or vegetables, along with whatever marinade you may be using, to stand out, then you may prefer this method. Depending on the dish, this is also one of the healthiest ways to cook.

Grilling simply means that you let the heat from the grill do the cooking and flavoring. You definitely want to marinate your meats for at least an hour or so before grilling. This adds to the flavor and also tenderizes the meat. I prefer to marinate over-night whenever possible. You can also use the marinade for a baste while the meat is cooking. Also, feel free to add whatever spices you like while cooking.



BARBECUEING:
This is grilling with one more step added. Mainly, the barbecue sauce. The sauce is usually added when the meat is 15 to 20 minutes from being done, but you may slather it on the whole time if you like it a little burned. You may also grill the meat first, then add warmed up sauce just before serving, or serve the sauce on the side.


SMOKING:
This method requires a lot of time because the meat is slow-cooked in a low, indirect heat. It is best to use a smoker/grill that is designed for this type of cooking. You will also want to use some type of hardwood chips that have been soaking in water for about 20 minutes before they are added to the smoker. You can use applewood, hickory, mesquite, cherry, or maple. This is what gives it that great smoked flavor and the meat just falls off the bone after cooking 6 to 8 hours. Well worth the time and trouble!
