Trinidad and Tobago

Actually, there are no typical Christmas Cookies in Trinidad and Tobago. There is a typical Christmas cake though.
However, Coconut Drop cookies come as close as possible to being a typical Trinidad cookie as you can get. Here is the Recipe:

Coconut Drops
Ingredients:

1/4 Cup margarine or butter
1/2 cup sugar
1 egg
1/2 tsp lime juice
1/4 cup milk
2 cups flour
1 1/2 tsps baking powder
1/8 teasp. salt
2 cups grated coconut

Method:

1) Cream sugar and butter, add salt and baking powder, egg, lime juice and milk, making a stiffer dough than you would for cake mixture

2) Add the coconut with the flour

3) Drop by spoonfuls on a greased baking sheet, leaving space in between for spreading

4) Bake in a moderately pre-heated oven for about 15-20 mins

Germany

Germany has many traditional Christmas cookies. Baking for Christmas is a big thing there. Here follows a typical German Christmas cookie recipe :

Zimtsterne
( Cinnamon stars )

Ingredients:

3 egg whites
250 grammes icing sugar
2 teasps cinnamon
500 grammes ground , unpeeled almonds

Method:

1) Beat egg whites until stiff

2) Add icing sugar while beating steadily

3) Reserve about six tablespoons of this egg white mixture for topping

4) Now add cinnamon and ground almonds to the balance of the mixture

4) Roll this dough out to about
1 cm thickness ( 1/2 inch )

5) Cut out stars with a cookie cutter

6) Top stars with reserved eggwhite mixture and place on a prepared cookie sheet

7) Place in oven, turn heat to 300º F and bake for about 30 mins.

 

Holland

Also in Holland there is a strong tradition of baking for the holidays. The following recipe is very Dutch

Speculaas

Ingredients:

200 grammes cake flour ( this has baking powder in it already)
75 gr margarine
100 gr ( 1 cup ) brown sugar
2 teasps - 1 tablesp allspice
a pinch of salt
1 tablesp. milk
about 100 grammes almonds or peanuts, shredded


Method:

1) Mix cakeflour with margarine, brown sugar, salt, and allspice until smooth

2) Rest dough for about 10 mins.

3) Roll out dough on a floured surface ( to about 1/4 inch thickness )

4) Sprinkle almond or peanut chips over dough and press them lightly into the dough with the palm of your hand

5) Cut shapes out of dough and place on prepared cookie sheet ( or if you have traditional wooden speculaas moulds,press dough into the moulds, then turn over and beat back of wooden moulds until dough drops onto prepared cookie sheet)

6) Bake in 300 degr. F oven for about 20 - 25 mins.
