baked in a Römertopf (Clay Pot)

 

Ingredients:

1 1/2 cups cornmeal
1/2 cup all-purpose flour

1 teasp. salt

1 teasp. baking powder

1 teasp. bicarbonate of soda

1/4 cup melted butter

2 cups milk

juice of 1/2 lemon

2 eggs

oil for greasing

Method:

  • Mix together the cornmeal, flour, salt, baking powder and bicarbonate of soda
  • Make a well in the middle and pour in the melted butter, milk, lemon juice and eggs, then beat well to make a smooth, thick batter
  • Thoroughly grease the soaked clay pot and pour in the batter
  • Cover pot and place in the cold oven
  • Set the oven at 450F and cook for 30 mins.
  • Uncover pot and cook for a further 5 mins, or until the bread is firm to the touch and golden-brown
  • Insert a metal skewer into the middle of the bread; if it comes out sticky with mixture bread is not cooked fully- replace bread and cook further
