For
those who love Indonesian food, here is a first course/entrée,
called LOEMPIA (egg roll) Pronounced Loompia- accent on the
first syllable.
To
prepare this loempia, please cut the ingredients as small as
possible and fry thin, sheetlike, pancakes.
To
prepare the pancakes, you need:
1
pnd. flour,
6 eggs,
1/2 teaspoon of salt,
1 tablespoon corn flour/maizena,
water,
1 dl. cornoil.
Now
that you have all of the above mentioned ingredients, let's
start:
Mix
the flour, the corn flour/maizena and the salt together. Add
the whipped eggs and some water and make a smooth batter. Heat
the cornoil in the pan, pour it in the batter and fry the pancakes.
For
the filling:
1/2
pnd cabbage,
1/4 pnd french beans or better green string beans,
2 packages of been sprouts-taugé-200 grams each,
2 blocks of tahu/tofu 6 x 6 cm.,
some soup greens,
1/4 pnd of bamboo-shouts,
1 big onion,
1 pnd of boneless chicken or raw shrimps,
1 teasp. black or white pepper,
salt,
beef-tea cube,
1/4 teaspopon of ve'tsin (chinese),
cornoil.
Preparation:
Clean
the taugé (throw the seeds away). Cut the tofu/tahu into
slices and fry. Heat the corn-oil and fry the thinly cut onion
till golden brown
Also fry the finely cut chicken(meat) and tahu/tofu.
When ready, add the finely cut soup greens, salt , the ve-tsin,
the black pepper and the beef-tea cube. The filling should be
finished to one's liking. Put a tablespoon full of this filling
on a pancake and roll it up. The rolled parts must be pasted
together with a mixture of water and flour. Roll the filled
loempias in a whipped egg mixture and deep fry in cornoil till
sufficiently brown. The fried loempia should be served warm.
Ingredients
for a sauce for the loempia:
3
cloves of garlic,
2 peppers,
1 bottle of tomato-ketchup (450 ml.)
1 teaspoon of sugar.
Cut
the garlic and peppers into very small pieces ( or mash). Add
this with the sugar to the ketchup and stir. (It's also possible
to serve this sauce warm).
NB
The loempia can also be served as a party snack. Normally speaking
loempia is served with beer, but I never heard anybody complain
about a good wine or any delicious cultural drink. Without chicken-meat
it's a vegetarian dish.
