Recipes
Blueberry Muffins
1 3/4 cups all purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/4 cup butter/margarine
1/2 cup granulated sugar
1 egg
3/4 cup milk
1 tsp. vanilla
1 cup blueberries, fresh or frozen
1 tbsp. all purpose flour (for
blueberries)
In large bowl put flour, baking
powder and salt. Stir together thoroughly. Make a well in center.
In another bowl cream butter and sugar. Beat in egg until quite smooth.
Mix in milk and vanilla. Pour into well. Stir just to moisten.
Batter will be lumpy.
Stir blueberries with flour lightly.
Fold into batter. Fill greased muffin cups (or use paper cup liners).
Bake in 400oF oven for 25 minutes until nicely browned. Makes 16

Blueberry Pancakes
1 1/2 cups all purpose flour
1 tblsp. granulated sugar
1 tbsp. baking powder
1/2 tsp. salt
1 egg
2 tbsp. cooking oil
1 1/2 cups milk
3/4 to 1 cup blueberries, fresh
or frozen
Combine flour, sugar, baking powder
and salt in medium size bowl. Beat egg slightly in small bowl. Mix
in Oil and milk. Add to dry ingredients. Stir(a few small lumps are fine!).
Fold in blueberries (coat with a bit of flour first!) Add more
or less milk to have thicker or thinner pancakes. Drop batter by spoonful
onto lightly greased hot pan 380oF. Makes 12
