Ian's Triple Choc Special

Ingredients

125g of butter
¾ cup of castor sugar
1 egg
½ tea spoon of vanilla essence.
¼ tea spoon of salt.
1 tablespoon of desiccated coconut
½ tablespoon of macadamia nut oil
20g of broken white chocolate
20g of broken milk chocolate
20g of broken dark chocolate.
1 cup plain four (or arrowroot flour)
1 cup self raising flour

Method

Zap butter for 45 sec in the microwave in heatproof container
Add sugar, mix with hand held blender
Add egg and mix by hand
Add vanilla, salt, coconut and oil, mix
Add chocolates, mix
Add flours, mix
Mix and kneed into a firm dough.
Oil 2 trays with macadamia nut oil.
Divide mix into 12 equal size balls and place on trays.
Place a chocolate drop on top.
Cook in a 160ºC for 15 to 20 minutes until colour is a light brown.
Cool and eat.
