2 Tablespoons unsalted butter or margarine, softened
1 cup sugar
1/2 cup unsweetened applesauce
1 egg, or 2 egg whites
2 teaspoons vanilla
1/2 cup un-sweetened cocoa powder, regular or Dutch process
3/4 cup whole-wheat pastry flour

Preheat the oven to 350. Lightly coat an 8 inch by 8 inch baking pan with no-stick spray. In a medium bowl, using an electric mixer, beat the butter or margarine, sugar, applesauce,egg, or egg whites and vanilla. Then slowly beat in the cocoa and flour. Pour the batter into the prepared pan and bake for 25 minutes, or until a tooth pick inserted into the center of the brownies comes out moist and wet. Cool on a wire rack before cutting.
