Ma's Tips On Hamburger




Regular ground beef must have not contain more than 25% fat.

Lean ground beef must not contain more than 15% fat.

Hamburger should be stored well refrigerated. It should not be stored for more than 2 days unless kept in a freezer. If stored in a freezer use within 2 or 3 months.

Do not refreeze frozen hamburger once it has thawed.

Hamburger should be handled as little as possible, to keep its juicy and tender.

Put hamburgers loosely into shape. Do not squeeze the juice out of them with a spatula while they are cooking.

Mix meat loaves by tossing lightly with a two-tined fork.

The more times hamburger is ground the more compact it becomes. Compactness is acceptable for meat loaves and meatballs.

A pound of hamburger makes 4 servings.
