5-8 lb. country ham (salt cured)

 3 large onions

8-10 tart apples

3 dried cayenne pepper pods

1 1/2 cup sorghum or molasses.

 1 1/2 cup peanut butter

 1/2 cup brown sugar

 

Scrub ham with stiff brush until all salt and mold is removed. Place in pot large enough to allow the ham to float, cover with water + 2" and soak for at least 12 hours. (more is better)

Core apples and quarter. Peel onions and quarter. Add these + the hot pepper and sorghum to the pot and stir in. Bring water to a boil, then reduce heat and simmer VERY lightly. Water should just tremble on the surface. Cook ham until shank bone protrudes 1" ..about 4-6 hours..

Remove from liquid. Save the liquid for cooking vegtables or soup making.

 Preheat oven to 375 degrees. Skin the ham and score the fat. Place fat side up in roasting pan. Mix peanut butter and brown sugar and spread over ham.

Bake 15-20 minutes until glaze is brown but not burned.
