My Filipino friend, Ruth, is a self-proclaimed "Potato": 
                           Brown on the outside, white on the inside.  Shes also 
                           one of the hottest tamales in town.  Wed go dancing, not 
                           spend a dime (not even cover charge), and come out of the 
                           place drunker than skunks.  Shed even come out with flowers! 
                           So its no wonder that this is her signature party dish. 
                           She IS a party dish.

8 potatoes, peeled, boiled and cubed (peel first then boil) 
                                    1 package imitation crab 
                                    2 hard-boiled eggs, diced with fork 
                                    1 cup of mayonnaise (fat-free is fine). Adjust amount to 
                                    your preference if desired. 
                                    1 bag of Ruffles potato chips, crushed into bite-sized 
                                    pieces (potato chips/crisps with ridges)
                                    Salt and pepper to taste 
                                     
                                    Preheat oven to 350 degrees F.	
                                    In bowl, mix cubed potato, crab, eggs, mayonnaise. Add 
                                    salt and pepper to taste.  Place potato salad into shallow 
                                    glass or metal baking pan. Top with crushed potato chips. 
                                    
                                    Bake at 350 degrees until hot (about 15-25 minutes).  Serve 
                                    immediately.
