Salad days are here again! Here are some ideas to make your salad a super one!
Don't just use plain red wine vinegar! Try cranberry juice or other kinds of vinegars.
Don't be afraid to try different styles of salads! One of my favorites is a Chinese style, which is just cucumbers marinated in a little sesame oil and vinegar!
To prevent greens from wilting on you, don't add the salad dressing until just before serving!

Meat, pasta, veggie, tossed, slaw and more! |
8 oz fettucine | ½ cup frozen corn |
1/4 cup Parmesan cheese | ½ t. garlic powder |
1 t. fresh cracked pepper | ½ c. Kraft fat free mayo |
Cook pasta according to directions. Drain. Mix pasta and corn in a bowl. Mix together the mayo, cheese, garlic powder, and pepper. Combine pasta and sauce, and mix well. Salt to taste. This is best if refrigerated a few hours before serving. |
Tortellini Salad | |
2.5 lb. cooked torellini or pasta | ½ cup mild vinegar |
2 T +1 t. Dijon mustard | 1 cup oil |
½ T. parsley | ½ T. dill |
½ t. basil | 3/4 cup turkey, cubed |
½ c. ham, cubed | 3/4 c. sliced green onion |
Mix vinegar, mustard, herbs and oil with whisk. Add this to the tortellini, veggies, and meats. Serve cold with Parmesan cheese. |
