Note: This is my fav right now. Unfortunately, I
rarely measure anything, so you'll have to bear with me.
In bottom of big pot saute 3-4 cloves garlic, one med
onion, 1t. turmeric, 1T. cumin seeds, 1t. crushed red pepper in 1-2T ghee(you can use butter but ghee is better for you) until
onion is transparent. Add 1c lentils and cover with water. Cook until soft and almost mushy (45min or so). If the water starts
to cook off add more. When lentils are done, take off heat and season with salt to taste. Then stir in 1/2 c or so of fresh
chopped mint and 1 tomato. Serve with pita wedges or a sliced baguette and salad.
