Note: You can vary this according to taste, basically
you need cumin and lentils to make it work.
Fry some garlic and cumin seed in oil till slightly
brown, maybe onions too, add lentils (any variety, but red are my favorite for this), then water. Keep adding water as this
simmers on the stove so it doesn't stick to the bottom. Sea-salt and pepper to taste. I add fresh cilantro leaves finely chopped
at the end. You can also garnish it with a swirl of plain unsweetened yogurt, or squeeze in a wedge of lemon. I had it served
with yogurt at a very fine restaurant in India, and with a lemon slice at a place here in the states. My husband likes it
with the lemon best.
