For lack of better catagory, I put this in breakfast because it is good for a company breakfast but also wonderful for supper.
1 lb Jack cheese
1 lb Longhorn or cheddar cheese
1 large and 1 small can ortega whole chilies
6 eggs - separated
1 8oz can tomatoe sauce
1/2 cup canned salsa or taco sauce
1 small can evaporated milk
2 Tbsp flour
salt, pepper and garlic powder to taste.

Grease 9 X 13 pan or casserole dish.
Grate cheeses; toss together.
Beat egg whites whites until stiff.
Mix with fore, egg yolks, canned milk, flour, salt, pepper and garlic powder.
Fold egg yolk mixture into egg whites.
Lay half the chilies in bottem of casserole.
Cover with halp of the cheese.
Layer rest of chilies and rest of cheese.
Pour egg mixture over all.
Bake at 325 for 45 minutes.
Mix tomatoe sauce and salsa; spoon over top and bake 15 minutes longer.
Cool 10 minutes before cutting and serving.
