Fish & Seafood Salmon BBQ

Recipe Ingredients
Use either a covered BBQ or make a hood of foil over the fish to catch some of the smoke.

Ingredients:
two whole salmon fillets WITH SKIN (cut salmon lengthwise). About 8 lbs whole weight.
1/4 cup margarine
1/8 cup lemon juice
pepper to taste
seasoned salt to taste

Recipe Directions
Prepare a baste with the margarine, lemon juice, pepper and seasoned salt.
Make a boat from heavy foil for each fillet.
Place fish on foil, skin side down and baste.
place on BBQ and cover.
Baste several times while cooking (about 25 minutes)
or until fish flakes when tested.
When fish is done, lift each foil lined fillet to a serving plate or plank.
To serve, cut the salmon across fillets and just to the skin; lift each serving away from skin.
You can serve with cucumber sauce listed below.

CUCUMBER SAUCE
Peel 3 long, thin cucumbers; split into quarters, discard seeds. Finely chop. Sprinkle with 2 tsp. salt and chill for at least 2 hours; drain well. Mix with 1 cup sourcream, 1 cup mayonnaise and 1 TBSP dill weed or chopped fresh dill.
