This old Italian recipe may be hard to pronounce, but all you need to know is umm umm good! Thank you Sister Gayanne, God rest her soul.
1 1/4 lbs. bulk Italian sausage.
1/2 med onion, chopped fine
1 lb. fettichine pasta
3/4 cup half and half (can use milk)
3 eggs, beaten
1/2 cup grated parmesan cheese
1/2 tsp. garlic salt.

Crumble and cook itallan sausage. Add onions and simmer on low until onions are done (Do not let onions get brown). Cook fettichini pasta noodles according to package directions. Drain, return to pan. Add meat and onion mixture, cream, and garlic salt. Mix lightly. Just before serving, pour eggs over top, sprinkle on parmesan; toss together with spoon, just for a minute or until eggs are done.
SERVE IMMEDIATLY!
