* Exported from MasterCook * Chicken Paprika Recipe By :Editors at Rodale Press Serving Size : 8 Preparation Time :0:00 Categories : Low Salt Main Dishes Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 whole chicken breasts -- quartered 4 chicken drumsticks 4 chicken thighs 1/2 teaspoon turmeric 2 teaspoons paprika non-stick cooking spray -- or oil for browning 1/2 cup chopped onions 2 cups water -- or unsalted chicken stock, to 3 cups 1 tablespoon cornstarch -- mixed in 2 tablespoons cold water 1 cup yogurt 2 tablespoons chopped parsley fresh parsley sprigs -- for garnish 1. Wash chicken. Pat dry with paper towels. In a small bowl, combine turmeric and paprika and coat the chicken with this mixture. 2. In a Dutch oven or large skillet, brown the chicken. Stir in onions and sauté briefly, then add stock or water. Cover, bring to a boil, reduce heat, and simmer about 45 minutes. Remove lid and continue to simmer until stock is reduced by half. Chicken should be fork-tender. Arrange chicken on a heated platter to keep warm. 3. Dissolve cornstarch in cold water (Sue says: I use a small jar and shake it to mix) and add to the stock, stirring constantly. Cook until the sauce is thickened. Add yogurt to the sauce, stirring constantly. Stir in chopped parsley.
