4 lb 7 bone chuck steak/roast
3 c stock
1 onion, chopped
1 1/2 T karo syrup
1 T butter
1 T vinegar
bay leaf
sherry or port splash
salt and pepper to taste
thickener=1/4 c flour & 1/2 c cream

Rub steak with butter,salt & pepper.
Brown meat and and add onions. Cook for 2-3 minutes before adding remaining ingredients. Simmer or braise covered for 1 1/2 hrs or until tender. Remove meat and strain stock. Thicken slightly with flour and cream. Add dumplings and serve hot. (see dumpling receipe in breads group)
