Salads My Favorite Potato Salad Recipe

Servings: Makes 5 Cups
Preparation Time: 30-45 minutes

Recipe Ingredients
1 cup Hellmann's mayonnaise
2 TBS vinegar or sour pickle juice
1/2 tsp salt
1 tsp sugar
1/4 tsp pepper
4 cups cubed, cooked potatoes; (4-5 medium)
1 cup sliced celery
1/2 cup chopped onion
2 hard-boiled eggs, chopped



Recipe Directions
Combine the first 5 ingredients. Stir in remaining ingredients. Cover, chill.

This is the easiest and best tasting potato salad recipe I have ever used. I find that by boiling the potatoes with their skins ON, and peeling them after they cool and rinsing them in cold water, they will remain firm and not get too mushy. This makes cubing them so much easier.
