Vegetables Vegetarian Casserole

Recipe Ingredients


1 Lb. potatoes, thinly sliced
1 bag (1 lb) carrots, crinkle-cut and parboiled
1 pkg. (10 oz.) frozen whole-leaf spinach. thawed and squeezed dry
1 cup prepared alfredo sauce
2 cups cheese (Gruyere), shredded and divided
2 cups bread crumbs, toasted
1 TB. chopped parsey






Recipe Directions


Heat oven to 350 degrees F. In a greased 2 qt. baking dish, layer sliced potatoes, carrpts and spinach with alfredo sauce and 1-1/2 cups cheese.
In a large batter bowl combine toasted bread crumbs, remaining 1/2 cup cheese and parsley. Sprinkle over vegetable mixture. bake 45 minutes to an hour, or until crust is golden brown and filling is bubbling.


*Note: Make sure to slice your potatoes very thin and parboil the carrots well, or cooking time will have to be increased.
