Salads Spinach Salad with Oriental Dressing

Recipe Ingredients


1 pkg. fresh leaf spinach
6-8 oz. sliced mushrooms
1 cup chinese crunchy noodles
2 eggs, boiled and peeled

ORIENTAL DRESSING

3TBS. vegetable oil
1TBS. lemon juice
1TBS. sesame seeds, toasted
1-1/2tsp. soy sauce
1 clove garlic, pressed
1/2tsp. ginger root, peeled and finely chopped







Recipe Directions


Wash spinach leaves throughly in cold water to remove all dirt. Place spinach in a large pot and cover spinach with water. Let stand 10 minutes and most all dirt should float to the top. Skim off dirt with slotted spoon, and drain leaves.


As spinach drains, combine all ingredients listed for oriental dressing and blend well, either with a wire wisk or hand-held mixing tool.

In salad bowl, place spinach leaves, sliced mushrooms, chinese noodles and ONE chopped boiled egg. Pour dressing over salad and toss to mix.

Slice remaining boiled egg with egg slicer and place slices on top of salad.


Serve this with french bread and butter for a light lunch, or add a hearty split pea or lentil soup for a more filling dinner on a cold evening.
