Cookies & Candy Saltine Toffee

Recipe Ingredients



1 box saltine crackers- make sure they have salted tops.

1 stick butter or REGULAR margarine

1--12 oz. pkg butterscotch morsels

1--12 oz. pkg semi-sweet morsels

1/2 cup finely ground nuts (optional)




Recipe Directions


Melt margarine. Be sure not to use low or reduced-fat margarine for this recipe or it will not work.
Preheat oven to 400 degrees (F) and place saltines salt side up on an ungreased cookie sheet. The amount of saltines you use will depend on the size of the cookie sheet. Make sure your cookie sheet has sides on it in order to hold the melted margarine.
Once you have placed the saltines on the sheet, touching side-by-side, pour the melted margarine or butter evenly over the saltines. Place cookie sheet in hot oven for about 10 minutes, or until saltines have browned, but not too dark.

Remove sheet from oven and pour butterscotch morsels over saltines quickly, so that the heat will melt them. Once melted, use an all purpose spreader and spread the butterscotch over the saltines all the way to the edges, making sure to keep saltines touching. Allow to cool until set, either in the freezer for about 5 minutes or longer at room temp. You will notice that the freezer sets it faster and you can move to the chocolate faster.

Once the butterscotch is set, pour chocolate morsels over the top and return to the oven for about 5 minutes or long enough to melt the morsels. REMEMBER- even though the morsels haven't lost their shape, they will still melt so you will need to check them with your spreader for softness.

Remove cookie sheet from oven as soon as the chocolate is melted, so as not to re-melt the butterscotch. Use your spreader and carefully spread the chocolate over the butterscotch. Try not to marble the two, but don't worry if it happens. As with the butterscotch, place the sheet in the freezer for about 5 minutes to set. After it has set, remove from the freezer and break the toffee into serving-size pieces. This is the part my daughters love to help with.

If you are using nuts, first grind them up in a hand-held cheese grater or something similar, and sprinkle them over the chocolate BEFORE you place the sheet into the freezer.

This recipe is a tradition at Christmas in our house, and a wonderful gift when places in a festive package or tin.
