Breakfasts Low-Fat Granola

Recipe Ingredients

7 cups rolled oats
1 cup coconut
1 cup wheat germ
1 tsp. salt, optional
½ cup warm water
3 tsp. vanilla
1 RIPE banana



Recipe Directions

Combine dry and liquid ingredients. Toast in slow oven (250-300 degrees) stirring every 15 minutes. May take 2 hours to dry and brown.

ADDITIONS: nuts, seeds, other fruits or juice concentrate for flavor change or sweetening (add dry fruits after baking), spices or liquid flavor extracts, other rolled grains (substitute for some of the oats).

COMBINATIONS: banana-orange: use ¼ cup orange juice concentrate, 1-1/2 cup banana, 1-1/2 Tbs. fresh grated orange rind OR ¼ tsp. orange extract, 1-1/2 tsp. coriander.
Cashew-pineapple: ½ cup walnuts, ¾ cup cashews, 1 cup pineapple juice, and 1 Tbs. vanilla.
Tropical: ½ cup pecans, 2 tsp. vanilla, 1 tsp. cinnamon, 2 cups dried tropical fruit mix, 1 cup pineapple juice, coconut.
