Vegetarian & Vegan Nacho Potatoes

Recipe Ingredients

3 Tbs. water
2 medium baking potatoes (12 oz total), unpeeled, cut into 1” chunks
½ tsp. chili powder
¼ tsp. cumin
Salt to taste
4 oz shredded lowfat Cheddar cheese (1 cup)
1 4-oz can chopped green chilies, drained



Recipe Directions

Preheat oven to 350 degrees. Lightly oil a 9” pie pan or spray w/ a nonstick cooking spray.

Place water in prepared pan and add potato chunks. Sprinkle evenly with chili powder, cumin, and salt. Bake, covered, 45
minutes.

In a small bowl, combine cheese and chilies, mixing well. Spoon mixture evenly over baked potatoes. Return to oven,
uncovered, 5 minutes or until cheese is melted. Serves 4.

PER SERVING: 161 calories; 10 gm protein; 5 gm fat; 17 gm carb.; 382 mg sodium; 20 mg chol.
