Recipe Ingredients
1 cup whole wheat pastry flour
¾ cup unbleached white flour
1 tsp. each baking powder and baking soda
1-1/2 tsp. cinnamon
1 tsp. each allspice and nutmeg
Pinch of salt
¾ cup maple syrup
¾ cup water
¼ cup canola oil
1 Tbs. apple cider vinegar
Powdered sugar (optional)



Recipe Directions

Preheat oven to 350 degrees and place paper cupcake liners in twelve muffin cups. In a large bowl, sift together flours,
baking powder, baking soda, and spices. In another bowl, whisk together syrup, water, oil, and vinegar.

Add the wet ingredients to the dry and mix thoroughly. Batter will be lumpy. Immediately spoon batter into muffin cups, filling
each about 2/3 full. Bake for 15 to 20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean. Dust
tops of cooled cupcakes with powdered sugar, if desired. Makes 12 cupcakes.
