Breakfasts Wild Rice Pancakes

Recipe Ingredients

2 eggs
1-1/4 cups buttermilk
½ tsp. baking soda
1-1/4 cups unbleached white flour
1 tsp. baking powder
1 tsp. sugar
½ tsp. salt
2 Tbs. vegetable oil or melted butter or margarine
1 cup cooked wild rice



Recipe Directions

In a large bowl, whisk together eggs, buttermilk and baking soda. In a separate bowl, combine
flour, baking powder, sugar and salt; add to egg mixture. Stir until just combined. Whisk in oil or
butter or margarine, and wild rice.

Pour about 3 Tbs. of batter for each pancake onto hot griddle. Cook until pancakes puff and
become dry around the edges. Turn and cook other side until golden brown. Makes 12 pancakes;
serves 4.
