Apricot Cookies

1/2 cup margarine, melted
1/4 cup sugar
1/4 cup sugar free apricot preserves
1/4 cup orange juice
1/4 cup water
1 teaspoon vanilla
1/4 cup egg substitute
2 cups flour
2 teaspoons baking powder

Mix all ingredients together.  Roll into a ball and cover with plastic wrap and chill for 2 hours. Pinch off pieces and roll into small balls.  Place on a cookie sheet and slightly flatten.  Bake at 350 degrees for 10 - 12 minutes

These are very chewy cookies!

Yields 16 cookies

per cookie = 1 bread exchange and 1 fat exchange
