HAM AND CHEESE CREPES
Filling:
1 ½ cups ham, cubed
1 ½ cups sharp cheddar cheese, cubed
2 cups medium white sauce (recipe follows)
crepes (recipe follows)
Mix together the ham, cheese, and 1 cup white sauce. Spoon a small amount into a crepe and
roll up. Repeat until mixture is all used. Place rolled crepes, seem side down, in a
shallow baking dish, side by side. Pour 1 cup white sauce over top of crepes.
Bake at 350 degrees for about 15 minutes, or until cheese is melted.
White sauce:
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
dash of pepper
1 cup milk
In a saucepan, melt butter then stir in flour until smooth. With a whisk beat in the milk,
salt and pepper. Heat over medium heat until mixture is thick and bubbly. Makes 1 cup
sauce.
Crepes:
3/4 cup flour
pinch of salt
1 1/4 cups milk
1 egg yolk
1 egg
1 tbsp. melted butter - or- light oil
Put all ingredients into a blender and blend until mixed thoroughly. Cook crepes one at a
time in a crepe pan.
