HOT CHICKEN SALAD
4 cups chicken, cooked and diced
½ cup celery, chopped
1 jar sliced mushrooms, drained
(You can use fresh if you want to)
2 tsp. green onion, chopped
1 can water chestnuts, sliced
½ cup mayonnaise
1 tbsp. lemon juice
½ cup grated cheddar cheese
1 cup potato chips, crushed
Mix the first 5 ingredients together. Mix together the mayonnaise and lemon juice, then
mix with the chicken. Put into a 9"x13" pan and top with the cheese and potato
chips.
Bake at 450 degrees for 10 minutes. Serve hot. Looks great served on a lettuce leaf.
