PUMPKIN SQUARES
Crust:
1 yellow cake mix
(reserve 1 cup)
½ cup butter, melted
1 egg
Mix together well, and pat into a greased 9"x13" pan.
Filling:
2 eggs, beaten
½ tsp. vanilla
2/3 cup evaporated milk
½ tsp. salt
16 oz. canned pumpkin
1 tsp. cinnamon
3/4 cup granulated sugar
1/8 tsp. cloves
½ tsp. ginger
Mix together well and pour over the crust layer.
Topping:
1 cup cake mix
1/4 cup granulated sugar
1/4 cup butter, softened
1 tsp. cinnamon
½ cup chopped nuts (optional)
Mix together until crumbly, then sprinkle over the filling. Bake at 350 degrees for 50-60
minutes. Cool before cutting.
