Sicilian Meatloaf

SICILIAN MEATLOAF

 

2 eggs, beaten
½ cup tomato juice
3/4 cup soft bread crumbs
2 tbsp. parsley, chopped
½ tsp. dried oregano
1/4 tsp. salt
1/4 tsp. pepper
1 clove of garlic, minced
2 pounds ground beef
4 to 6 oz. sliced ham
6 oz. mozzarella, sliced, reserve a couple of pieces

 

Mix the first 9 ingredients and form into a flat rectangle, lay out the ham and mozzarella in layers. Roll up starting from the short side, pinch close the ends. Place in a greased 9"x13" pan.

 

Bake at 350 degrees for about 1 hour and 15 minutes. Place reserved cheese on top and bake until the cheese is melted.
