Banana Sponge Cake

Makes 4 servings< 6 Tablespoons flour
2/3 cup non-fat dry milk powder
Artificial sweetener to equal 8 teaspoons sugar
1 1/2 teaspoon baking powder
Dash of salt
1 1/2 teaspoon vanilla
1 large banana, mashed
2 eggs

Combine dry ingredients and mix. Add rest of ingredients and beat for 2 minutes. Pour into 2 small loaf pans that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 30 minutes. Divide evenly into 4 servings.

Each serving provides: 1/2 bread, 1 protein/milk, 1/2 fruit/vegetable 3 grams fat, 1 gram fiber
