Wild Rice with Raisins

Makes 8 Servings

4 ounces wild rice
4 ounces long-grain white rice
1 tablespoon + 1 teaspoon margarine
1 cup chopped shallots
2 garlic cloves, minced
40 small seedless red grapes
1/4 cup raisins
1 tablespoon balsamic vinegar
2 tablespoons chopped fresh parsley

In a medium saucepan, bring 3 cups water to a boil. Stir in wild and white rice. Cover and cook 40 minutes. Uncover and cook 5 minutes longer, until rice is tender and liquid is absorbed.

Ten minutes before serving, in large nonstick skillet, melt margarine. Add shallots and garlic; cook, stirring frequently, 5 - 7 minutes, until shallots are golden. Stir in grapes, raisins and vinegar; cook 1 - 2 minutes, until liquid evaporates. Stir in parsley before serving.

Each serving provides: 1/2 Fat; 1/2 Fruit; 1/4 Vegetable; 1 Bread.

Per serving: 161 Calories; 4 g Protein; 2 g Fat; 33 g Carbohydrate; 28 mg Sodium; 0 mg Cholesterol; 1 g Dietary Fiber.
