Cole Slaw with Caraway-Mint Dressing

Makes 4 Servings

2 tablespoons + 2 teaspoons reduced-calorie mayonnaise
2 tablespoons cider vinegar
1 tablespoon caraway seeds
1 teaspoon granulated sugar
1/4 teaspoon freshly ground black pepper
3 cups shredded green cabbage
1 cup grated carrots
1/3 cup grated onion
2 tablespoons chopped fresh mint

1. To prepare dressing; in small bowl, combine mayonnaise, vinegar, caraway seeds, sugar and pepper; stir to mix well.

2. In large bowl, combine cabbage, carrots, onion and mint. Add dressing; toss to mix well.

3. Serve chilled.
