There is no feeling like the one you have when you look at the rows of canned food that you preserved yourself! The stunning colors that can only come from nature! Feel the extra beats of your heart when a neighbor compliments your efforts or a family member goes "Ummm" when tasting your canned vegetables! The greatest compliment I ever received was when my three year old asked if she could have more. She never liked apple butter before!

These recipies are here for you to use, but we are not responsible for any errors in presenting them or in the use of them.

All canned vegetables, except tomatoes, should be cooked in their liquid for 15 to 20 minutes before tasting or eating!

Any canned food that has a buldge on the lid or foam in the jar should be disposed of immediately!

Do Not taste or eat any vegetable that foams or has an unusual or unpleasant odor!

Dispose of spoiled food in such a way that it can not be eaten by humans or animals!

If you have never canned before seek expert help!

Foods that are not properly canned and stored can be DEADLY!

~GREAT GRAPE JELLY~

Makes about 8 or 9 8oz. glasses
For this recipie you can use 4 cups grape juice or you can use about 4 pounds of Concord grapes and 1/2 cup water. Grapes must be cleaned and crushed. Put the 1/2 cup water and grapes in a large pan, cover and bring to a boil. Reduce heat and simmer for 10 minutes. Remove from heat and extract juice. Allow to stand in a cool place overnight. Strain through double thickness of damp cheesecloth. Measure 4 cups of juice in a large pan and stir in 7 cups sugar. Quickly bring to a full rolling boil, stirring constantly. Add 3oz liquid pectin and return to full boil. Boil hard for one (1) minute. Remove from heat, skim off foam and pour into hot sterilized glasses. Seal immediately!

~APPLE JELLY~

Makes 3 to 4 8oz glasses
You need about 4 cups apple juice. If you use apples, you need about 3 pounds. Get some of the apples underripe and the rest fully ripe. Wash the apples but dont pare or core. These need to be cut into small pieces and put into a large pan. Add 3 cups water, cover and bring to a boil over high heat. Reduce heat and simmer 20 or 25 minutes until apples are soft. Extract juice and measure 4 cups into a lage pan. Add 2 Tbsp. lemon juice and 3 cups sugar. Mix well. Bring to a boil over high heat until the gel stage is reached. Remove from heat and skim off foam. Pour into hot sterilized glasses and seal immediately!

~MINT-APPLE JELLY~

Makes 3 to 4 8oz. glasses
Take one (1) cup mint leaves firmly packed. Clean and wash the leaves. Place in pan or bowl and pour in one (1) cup boiling water. Allow these to stand for about an hour. Press juice from the leaves and measure 8 Tbsp. Add this and a few drops of green food coloring to the APPLE JELLY recipie above.

Well this is all for now. I have a recipie for orange jelly but I will have to find it. Also, I think I had one for strawberry jelly but it wasnt real popular with the family. I will try to add more jellies later.
