Clown Apple Cake
4 cups apples-Peeled and diced
(Granny Smith or Pippin)
Add 
1 cups sugar 
1 cup brown sugar
1 tsp. cinnamon
1 cup chopped nuts
1 cup diced dates
Let stand
Beat
1/2 cup salad oil
2 eggs
2 tsp. vanilla
Add to above mixture
Mix
2 cups flour (unsifted)
2 tsp. soda
1 tsp. salt
Fold all into above mixture 
Bake at 325 for 45 minutes to 1 hour
in greased 9x13 inch cake pan
Try adding wipped cream for frosting after cooled

Corny Clown Pudding

1 16oz can cream style corn
2 eggs, slightly beaten
2 tbs flour
1/4 cup sugar
1/2 tsp baking powder
1 5.3oz can evaporated milk
1 tsp salt (or to taste)
2 tbs butter
nutmeg (to sprinkle on top)

Preheat oven to 350 degrees F. Butter, or spray 
with cooking spray, a 2
1/2 qt casserole. Combine all
ingredients except butter and nutmeg.
Bake 30 to 40 minutes, until
bubbly and somewhat browned on top.
Serves 4 and can be doubled.

Clarissa the Clown  Pumpkin Cheesecake 

Crust: 
1 1/4 cups graham cracker or vanilla wafer crumbs 
1/2 cup finely chopped walnuts 
1/4 cup granulated sugar 
5 tablespoons butter or margarine, melted 
1/2 teaspoon McCormick(R) Ground Nutmeg 

Filling: 
3 packages (8 oz. each) Neufchatel or cream cheese, softened 
3/4 cup granulated sugar 
3/4 cup firmly packed brown sugar 
4 eggs 
1 can (16 oz.) pumpkin 
1 teaspoon McCormick Pure Vanilla Extract 
1 1/4 teaspoons McCormick Ground Cinnamon 
1/2 teaspoon McCormick Ground Nutmeg 
1/4 teaspoon McCormick Ground Cloves 
Whipped cream to decorate, if desired 

Instructions: 
1. To make crust, place all crust ingredients 
in medium-size bowl and mix thoroughly. 

2. Spoon into 10-inch springform pan and 
spread evenly on bottom of pan. 
Press firmly onto bottom and halfway up sides of pan with 
bottom of small, straight-sided glass. 

3. Preheat oven to 350 degrees F. 

4. To make filling, place cheese, granulated sugar,
and brown sugar in large mixer bowl and beat 
with electric mixer until fluffy. 
Add eggs, 1 at a time, beating well after each addition.
Stir in pumpkin, vanilla, and spices. 
Mix thoroughly and pour into crust. 

5. Bake in preheated 350 degree F oven 
1 hour and 20 minutes. 

6. Remove from oven and cool completely in pan on wire rack.
Cover and refrigerate to chill overnight. 

7. Run knife around inside edge of springform pan and 
release sides of pan. Place on serving plate and decorate
with whipped cream.

MAIN   DISH

THIS and THAT CLOWN CHICKEN

1 pkg (16oz) frozen broccoli cuts
2 cups cubed cooked chicken
1 can (10 3/4oz) condensed cream of chicken soup
1/2 cup mayonnaise
1 tsp lemon juice
1/2 cup shredded sharp Cheddar cheese
1/2 cup soft breadcrumbs
2 tbs butter or margarine, melted

Heat oven to 350° F. Grease 12x8-inch (2 qt) baking dish. 
Cook broccoli according to package directions; drain. Arrange 
broccoli in baking dish.
Layer chicken over broccoli. In small bowl combine soup, mayonnaise, 
and lemon juice; mix well. Spread over chicken; sprinkle with cheese.
In a small bowl combine breadcrumbs and butter; sprinkle over top. 
Bake uncovered at 350° F. for 30 to 35 minutes or until thoroughly 
heated.  Serves 6.




SAUCE   AND   SALSA   ETC

               
        
CLOWN SALSA 
              
Ingredients 

2 cups canned tomatoes 
2 or 3 jalapanoes <2 for medium 3 for hot>
1 small onion 
clove garlic 
1/2 tsp black pepper  
1/2 tsp salt 


Directions 


Combine all ingredients in blender and puree! 
Pour into container!
Keeps for 2 to 3 weeks!!!
