This book was written for those of
you standing proudly before your food storage
pantry. A conglomeration of food which
is truly a sight to behold - a
masterpiece, built out of love, and
concern for your family. I would like
to thank all of my friends and
family, who helped me put it together.
I began gathering recipes just
shortly after I too, stood, and admired,
what I so lovingly refer to as "my
stash". I began to reminisce about all
of the hours I had spent clipping
coupons, shopping, and spending money
like a
madwoman, - when it hit
me
-
like a ton of bricks - "What in the
world am
I going to make out of all
this food?"

Frantically, I began searching the
internet for a cookbook devoted solely
to cooking "ala Y2k". You know- making
meals from a Y2k food storage pantry, without
the conveniences that I take for granted.
At that time, I came up empty
handed. Plenty on "home storage", but many of these assumed you would have access to some fresh ingredients, as well as refridgeration, and a stove that worked without tossing a log into it! I also think that the folks that these books were written for, are used to living this way, unlike myself, and my family. I know if problems arise with the arrival of the year 2000, adjusting will be difficult enough for us. I don't want preparing meals to be a fiasco, and I want my family to eat what I prepare!

I started organizing my recipes. Starting with the
ones for meals my family already
enjoyed,
and just happened to be "Y2k
Compliant". I then began to experiment
with "partially compliant" recipes,
turning them into fully compliant
recipes by using rehydrated, or canned
items in place of fresh. I loved the
challenge- and was delighted when my
husband didn't notice a difference!
Aside from the instant
mashed potatos - he seldom did.
Taking
into considoration that the man is a
"mashed potato connessieur", I think I
did an outstanding job turning
our daily
fare, into something we can still enjoy-
even if times do get
tough!

This
cookbook is a
compilation of tasty,
easy to prepare recipes, made
exclusively from foods we will
have stored to weather the Y2k storm.
It starts out with some pretty "common
sense" ideas- which- by the way- are
nice to have printed in front of you
when you need a quick meal. It
continues on with tried and true, comforting, homestyle, recipes. Recipes that will be
useful, when the time comes we have
to turn all of the food we have stored,
into something you and your family will actually
enjoy eating! If you like to collect those church/community/"Aunt Bea" type of cookbooks, you will definately want to add The Y2k Recipe Collection, to your collection!
I am a
wife, and mother of two beautiful little
girls. I want to keep things as
"normal" as possible for them- should
Y2k turn out to be as bad as some say it
could be. I love to cook, and
eat good food, which means we will
not be eating a diet of bland,
unappealing meals-ever! And if- God
willing, Y2k does turn out to be
just a minor bump in the road, I will
feel secure in knowing that my laundry
room full of food will not go to
waste!
