HERBS-INFORMATION AND RECIPES

This page is devoted to those persons who find herbs to be the most special ingredient in the adventure of cooking. Without herbs in my kitchen I don't think I could cook!!!
HERBS AND THEIR USES
ANISE
Adds a mild licorice flavor to cookies, candies, pastries, and a wonderful touch to poultry dishes.
BASIL
Cinnamon-Spicy cinnamon scent. Used in sauces and salads.
Dark Opal-Preferred by cooks for flavoring oils and vinegars.
Large Leaf Italian-For Neapolitan cuisine.
Lemon-Lemony aroma and flavor for potpourris, teas, chicken, fish, vegetables and herb vinegars.
Licorice-Like locorice candy.
Sweet-Used in tomato sauce, pesto and salads.
BORAGE
Used for flavoring teas: attracts bees. Also used in salads and lemonade.
CAT GRASS
Fast growing treat for cats.
CATNIP
Favorite of cats. Green leaves are good for tea.
Deters pests, but attracts bees.
CHAMOMILE, German
Small white daisies are fragrant, used in brewing tea, making perfumes or hair rinses.
CHAMOMILE, Roman
Delightful, aromatic, gray foliage. Used for dye, poypouttid, teas, and in dried arrangements.
CHERVIL
Fine aromatic leaves for subtle seasoning in soups, salads, fish, vegetables, cheese dishes and herb butter.
CHIVES, Common
Delicate, onion flavored foliage for flavoring and garnishing soups, potatoes, and salads.
CHIVES, Garlic
Flavor is midway between garlic and onion. Delicious in salads, spreads and flavored vinegars.
CILANTRO
Fresh cilantro is indispensible for Mexican and Asian cooking.
CORIANDER
Seed used in confections. Seed used to make curry powder.
CUMIN
Seeds used in flavoring Indian curries, Mexican cuisine.
DILL
Seeds used in pickling, leaves enhance salads, soups, omelets, and vegetables.
EPAZOTE
Use the leaves and young shoots for greens, older leaves for seasoning. A must with bean dishes.
FENNEL, Florence
Leaves used in sauces, with eggs, fish, salads, and for garnishing. Seeds used in cookies, cakes, and sausages.
Bulbous stem can be steamed, grilled or served raw.
GINSENG>BR> Asians consider Ginseng to be a general cure-all, promoting long life and virility.
HOREHOUND
For flavoring and medicinal tea.
LAVENDER, English
Great dried in potpourri and sachets. Dried flowers and leaves repel moths.
LEMON GRASS
Stalks flavor fish, poultry, soups-and Thai and Vietnamese dishes.
LEMON THYME
Adds a citrus flavor to broths, salads, teas, fish and chicken.
LOVAGE
Aromatic seeds used in cakes.
Celery flavored leaves for soups and sauces. Seeds used in spreads, dressings, pickling.
MARJORAM
Use fresh or dried leaves in salads, dressings, meat, lamb dishes, sausage, beans and soups.
MINT, Applemint
Use in teas, drinks, jellies, and lamb.
MINT, Curly
Small curly leaves flavor cold drinks, teas, sauces, jelly, candy, fruit salads and chocolate.
MINT, Peppermint
Peppermint-like oil used in flavoring candies and tea.
MINT, Spearmint
Makes fabulous tea, sauces, and jellies. A single leaf if a great breath freshener.
OREGANO, Greek
For authentic Greek dishes. A choice herb for cooking pizzas, tomato sauces and other dishes. Richer taste than regular oregano.
OREGANO, Italian
Indispensable for Italian Cuisine.
PARSLEY, Hamburg or Parsnip Rooted
Parsnip-like root adds delicious flavor to soups and stews.
PENNYROYAL
Repels fleas and other insects. Not safe for consumption.
PYRETHRUM
Flowerheads contain Pyrethrum-a natural insecticide.
ROSEMARY
Fragrant leaves flavor meats, poultry and potatoes. Use in potpourris.
SAGE, Common
Used in sausages, poultry, meat, bread, dressings, vegetables, omelets and stuffing.
SAVORY, Summer
The "bean" herb, used in dishes with beans, peas and lentils. Excellent as a salt substitute.
SAVORY, Winter
Leaves flavor beans, gravies, stews, dressings, soups, butter and vinegars. Salt substitute.
SESAME
Seeds used in baking to give delicious nutty flavor.
SORREL, French Soup
Small leaved sorrel, prized for French soupd and fish sauces.
SORREL, Garden
Tangy foilage is tasty with salad greens.
SWEET BAY
Leaves are used to flavor soups, stews, and fish.
TANSY
Leaves used fresh as dye, dried as insect repellent. Not safe for consumption.
TARRAGON,FRENCH
Used either fresh or dried, it imparts a delicious flavor to chicken, fish, salads, and vinegar.
TARRAGON, Russian
Flavoring for meats and vinaigrette.
THYME, English
Excellent for flavoring lamb and other meats.
WOOMWOOD
Ornamental silvery foilage. Leaves used to repel insects. Not safe for consumption.
