Strawberry Nectar


1qt strawberries, rinsed and hulled 
4 c white grape juice 
2-3 Tbsp, lime juice 
1/4 c sugar (superfine if available) 
1 lime, sliced, for garnish 

 Puree strawberries with 2 c grape juice . Strain mixture through a fine sieve into a large bowl. Discard seeds. Add remaining 2 c grape juice, and sugar to the mixture. Mix well and serve over ice, garnishing each glass with a slice of lime. Makes about 1 1/2 qts. Serves 4-6

Iced Coffee

Rich Coffee makes a great dessert
 
3 cinnamon sticks 
4 c freshly brewed, double-strengh, dark roast coffee 
1 pt vanilla ice cream 
ground cinnamon for garnish 
 
 Add cinnamon sticks to hot coffee and ice cream in a food processor or blender. Process until smooth. 
 Server over ice, spooning the froth on top and dusting lightly with cinnamon. 
Makes about 1 1/4 qts, serves 5
 
 
 
Desserts
Steamed Fruit Pudding


2 Tbsp oil
1/3 c honey
2 1/3 c bread crumbs
2 beaten eggs
1/2-3/4 c milk
1/2 c chopped figs,dates,raisons, or other dried fruit

Mix all ingredients. Use enough milk to make a mixture of soft ice cream...Oil a sponge cake tin and put mix in it.. cover with foil.. put in a large pot and add enough water around tin to come 1/3 of the way up around it.. simmer covered on med heat for 3 hrs.. when done it will be firm,springy, and moist. Spoon or slice into dishes and serve with hot lemon sauce

Hot Lemon Sauce

1 c water
4 tsp. cornstarch
1/4 c honey
4 Tbsp, fresh lemon juice
grated rind 1/2 lemon
2 tsp. brandy
freshly ground nutmeg
 
 In a small pan, dissolve the cornstarch in the water. Bring to a boil, stirring constantly, and boil five minutes or until thick and clear. Remove from heat and add honey, lemon juice, peel, brandy, and a sprinkle of nutmeg. Serve over warm cakes or puddings
