Simha's Aubergine Hors D'oeuvre
Ingredients:
I large aubergine, sliced
2 onions
5-6 hard boiled eggs
oil
salt and pepper

Directions:
- Saute onions in oil and retain the oil
- Fry the aubergine slices until golden and drain partially
- Process onions, aubergine and egg till smooth (alternatively, process only partially for a more natural, "chopped" texture)
- Season with salt and pepper
- Refrigerate and serve cold, in scoops
Note: If you expect this pate to taste like the chopped liver you'll be disappointed, but it is most delicious in its own right!

Chicken Satay
Ingredients:
4 chicken breasts
1 red or green pepper
Marinade:
2 Tbs natural peanut butter
2-3 cups chicken stock
2-3 Tbs dry white wine
1 Tbs soy sauce
1 Tbs curry powder
2 Tbs honey
1 garlic clove

Directions:
- Cut chicken into large chunks
- Cut pepper into large squares
- Mix marinade ingredients and pour over chicken and peppers
- Leave in fridge overnight
- Thread chicken and pepper onto bamboo skewers
- Microwave at 70% for 8-10 minutes, turning halfway
- Leave covered 5-10 minutes
- Garnish with lemon slices and fresh coriander
- Serve with white rice
Note: You can make natural peanut butter by processing together 100 g peanuts with 1 Tbs light oil.

Strawberry Mousse
Ingredients:
500g strawberries
1 cup sugar
dash lemon juice
2 egg whites
|
Directions:
- Liquidise strawberries with sugar and lemon juice
- Whisk egg white until stiff
- Add strawberry puree gradually to the egg white and beat for 10–15 minutes. (Increases greatly in volume)
- Freeze
Note: A great non-dairy, special occasion dessert this.
