Kalifornia's Quick Veggie Chili

1 med onion (diced)
1 green bell pepper (diced)
3 cloves garlic (minced)
2 T olive oil
1 can stewed tomatoes
1 can chili beans (Brook's Chili Hot Beans work best)
1 can vegetarian refried beans
1 can red kidney beans
1 can whole kernal sweet corn
1 8oz can Picante V-8
Tabasco (a few drops or many, this is optional)

Heat a large pan over medium heat, add the oil, onion and green pepper, saute until the onion is clear. Add the garlic, cook for a few minutes until lightly browned. Stir in the rest of the ingredients and cook for 30 minutes. Serves 4 to 6.

Tips : to keep this low-fat, garnish with shredded lettuce and fresh diced tomatoes & green onions; also serve with baked tortilla chips.
