These are wonderful on a grill, indoors or out! Here is what you will need: MARINADE 1/2 cup soy sauce 1/4 cup oil 1 Tablespoon brown sugar 1 teaspoon garlic salt KABOBS 2 whole boneless skinless chicken breasts 1 can pineapple chunks drained (save juice) 2 green peppers cut into large bite sized pieces 1/2 cup of the reserved pineapple juice 1 teaspoon dry mustard 2 teaspoons ground ginger 1/4 teaspoon freshly ground pepper 1 can whole water chestnuts 8 firm cherry tomatoes 8 large mushroom caps Combine marinade ingredients in small saucepan. Simmer 5 minutes. Cool. Cut chicken into bite-sized pieces. Marinate pieces for one hour stirring occarionally. Drain and reserve marinade. Thread chicken pieces, pineapple chunks, green pepper pieces, water chestnuts, cherry tomatoes and mushroom caps alternately onto four metal skewers. Grill or broil 20 minutes basting with reserved marinade. Serve warm. These are wonderful served over seasoned rice. Remember to discard any remaining maridade as the raw chicken was in the mixture. This should NEVER be used as a dipping sauce. Serves 4
