Another Red Beet Jelly

2 lb beets

2 tab corriander seed

1/2 c. lemon juice

1 package of Lower Sugar Sure-Jel

3 c. sugar

Scrub beets thoroughly. Cut of root and tops, and coarsely grate beets. Put beets and corriander seed in pot and add 4 1/2 cups of water. Bring to a boil and simmer for half an hour. (Watch it. Sometimes foams over.) Let cool some and strain juice from beets. Mix package of Lower Sugar Sure-Jel (in the pink box) with 1/4 cup of the 3 cups listed. Measure 4 cups of beet juice into the jelly pot. Add lemon juice and sugar/Sure-Jel mixture and stir to dissolve. Bring to a boil and add the remaining sugar all at once. Return to a boil and boil for 1 minute. Pour into hot, sterilized jars and seal. Have hot water bath ready with water almost at a boil. Place jars in bath and process timing from when the water comes to a full boil for 10 minutes at sea level. Remove and cool. Beet jelly is sometimes slow to set, but it will be set by the next day. Makes 3 pints.
