canning oven dried tomatoes


      I have canned oven dried tomatoes using the same brine as for the Roasted Sweet Red Peppers. You have to have some acid in your brine if you want to BWB the tomatoes but since I always drain them from the oil/brine mixture  before chopping and using them in recipes, the vinegar and/or wine in the broth doesn't really change the taste or affect the final recipe.
