Green Tomato Relish recipe


      I have found so many good ideas here I thought it was time I shared a family favorite. This relish is delish - wonderful
      with roast, ham, on meat sandwiches, on hot dogs, or mixed with Miracle Whip to make tasty tartar sauce for fish! My
      husband's mom and aunt both have made this recipe for a long time and we do too.

      Green Tomato Relish
      24 green tomatoes
      12 onions
      3 red sweet peppers
      3 green sweet peppers
      Coarse grind the vegetables and drain(too much juice and the relish is too runny).We sometimes let it drain for a few
      hours, stirring now and then to release more juice.
      Bring the following ingredients to a boil:
      6 cups sugar
      1 qt. cider vinegar
      1 Tbls. salt
      1/2 cup Mixed Pickling Spices, tied in a couple layers of cheescloth.
      Add vegetables and boil all 12 min. Remove spice bag and discard. Ladle relish into hot jars and seal with hot lids and
      rings. (We began processing these for 15 min or so because sometimes the jars didn't all seal.)
      Makes about 7 pints, depending on the size of all your vegetables. Enjoy!
