Some one wanted to know about bananas. We love canned bananas as a special treat, especially with ice cream or over white cake, but they are great right out of the jar. Here's the way I make them.

Spiced Bananas Hawaii

12 slightly green bananas

2 1/2 cups fresh lime juice

1/2 cup water

2 1/2 cups sugar

6 tab butter

1 tsp ground cloves

6 short sticks cinnamon

1 tsp ground ginger

1 tsp salt

1/4 tsp mace or nutmeg

Combine all but bananas in a sauce pan. Heat to boiling. Slice bananas in 1" chunks and add to boiling syrup. Simmer for 5 minutes, gently. Ladle into sterilized jars, and set jars into canner with water already at a simmer. Bring to a boil and process for 10 minutes. Remember to adjust time for your altitude. Makes about 5 or 6 pints, depending on the size of the bananas.
