Before you start your breeding you need to do several things. First you must rent out 6 stables at the chocobo farm( 60,000 gil). Next you must purchase 60 silkis greens fromt the chocobo sage( 30,000 gil). You must also have a chocobo lure to capture the birds. You'll also need 3 carob nuts which can stolen from the Valkorados( big red creatures), which are found in the grass area outside of the chocobo sage's house. You'll also need one Zeio nut which can be found to the NW of the of the chocobo farm on an island. In a forest region you'll battle goblins, you can steal one from them.

Go west of Mideel and capture a running female( a great bird). Then go southwest of Gold Saucer and capture a walking male( a good bird). Next go feed these birds 10 silkis greens each and race them both up to 1 class. Mate these two with a carob and keep reseting until you get a green male chocboo.

Feed the green chocboo 10 silkis greens and race him up to A class and then mate him with the yellow female chocboo using a carob nut. Keep reseting until you come up with a female blue chocboo.

Feed the blue chocboo 10 silkis greens and go race her up to A class. Go back to the stable and mate her with the green chocboo using a carob nut. Keep reseting until you get either a male or female balck chocobo.

Next you need to go to the east of Icicle and capture a sprinting chocboo( a great one). Feed both the black chocboo and the yellow chocboo 10 silkis greens and race them both up to A class. Then go back to the stable and mate the two chocobos using a zeio nut. Keep reseting until you get that GOLD CHOCOBO. Now go get Knights of the Round.
