Here is my section on Chocobo square. It has everything you may want to know about chocobo square.
Chocobo Square yields some great prizes and lots of GP so it is important that you race correctly. You can usully win the race in automatic, but when you get into S-Class and start racing Joe and Teoic you'll have to have a strategy. If you hold down R1+R2 your stamina will slowly return, so it is wise that you use this little cheat. It is easiest to win the short races so race in that category. You should always start the race manually with a few quick speed bursts. Then make sure that you're going slow enough so that your stamina is returning. By the time your heading into the ice section it is important that you have a full stamina bar and are in 1st or 2nd place. Then as soon as you hit the red carpet hold down the speed burst and you should come in first place everytime.
By winning all your races you can recieve some awesome prizes or a ton of GP. The prizes are as follows: If a prize is in several classes then I'll list it in its lowest class.

Hints and tips
The quickest way to level up your chocobo is to race two long races then a short one.
If you have either Cid or Tifa in your second slot then they may request to ride the chocobo once in a while. Don't let them as Tifa seems to make the chocobo slower. Cid also seems to get crappy prizes, so you should stick with Cloud.
If you win ten races in a row in S-Class then you'll receive a prize. You'll get a chocobraclet, power vest, precious watch, sprint shoes, and a counter attack materia.
